Breakfast: Banana steel cut oats topped with frozen raspberries and Peanut Butter & Co Smooth Operator. This was a nice breakfast but I was literally starving a few hours later. I think breakfast kick starts my appetite and then I’m hungry the rest of the day. It doesn’t really give me energy honestly…maybe breakfast just isn’t for me.
Dinner: Some random mix of ingredients. Tasted gewd.
Are you korean?
Lots of produce at HMart. Some things of note: donut peaches, jujubes, lychees, sweet potatoes, KABOCHA (!!!)
Lunch with my parents and aunt: Half and half jjajangmyun and orange chicken. Fried mandoo to share. The mandoo must have been handmade because they were SO GOOD.
For the #1 man in my life - my daddy! It’s his birthday today so I made him a banana cream pie topped with fresh whipped cream, berries, sliced almonds, and coconut flakes (we love fruit!). I thank God each and everyday that he blessed me with the best father in the whole world. I love you daddy!
Wild Blueberry Cream Cheese Croissant from Specialty’s Bakery. I was super sick yesterday and wanted something sweet…and these are my favorite! The croissant part has a nice crunch on the outside, yet is buttery and soft on the inside, and the cream cheese adds just enough sweetness.
Flying Business Class on the way back home. This was grilled chicken and steak with a salad and veggies. Not the best though…
For dessert was chocolate cake!
One of our fancy breakfasts while in Honduras. The pancakes were super soft and fluffy!
Street bread in Honduras. It tastes just like korean soboro bread but even better! I LOVED THIS!
A traditional meal in Honduras! Rice, beans, boiled green banana, and freshly caught fish! Simple but delicious.
Oatmeal topped with fresh blackberries (that I picked outside my condo), black plum, almonds, and caramel sauce.
Banana oatmeal with ataulfo mango, sliced almonds, and caramel sauce. Surprisingly good!
Random eats: A sweet potato bun from HMart, Shin Ramyun with Rice cakes and mandoo, asian corn (its stickier than normal corn), and mangos/cantaloupe!
Green Juice: 1 green apple, 1 cucumber, kale, and lettuce.
Oatmeal with ataulfo mangoes, raspberries, Fage greek yogurt, and almond butter.
